Recipe for Healthy Oatmeal Raisin Banana Chocolate Chip Cookies

In recent times I’ve been very concerned about the poor food practices in this country, and how they affect my family and my own health.  I’m hearing all kinds of horrible things that are happening to people mainly because of their poor diet. I want to avoid that for my family.

As a result of this knowledge I am usually trying to improve the way we eat. Snacks can be difficult because what we typically think of as a snack is something super sweet or salty.  In my house we crave the sweets!

Here is a recipe I came up with one day when my kids were in the mood for sweets, but I had other plans. My sweet baby J smashed into some very ripe bananas I had on my counter so I knew their treat would include those.  It turned out great and the kids loved them, even though I didn’t add any sugar or even maple syrup, well except for the chocolate chips…. If you have a problem with chocolate, feel free to add a little cinnamon instead for a healthy oatmeal raisin banana cookie.

 

Oatmeal Raisin Banana Chocolate Chip Cookies


(Vegan, Gluten free, No oil, No added sweeteners)


Ingredients:

3 Medium over-ripe bananas

2 cups Oatmeal

80 Grams (about a 1/2 Cup) of raisins

59 grams of semi-sweet vegan chocolate chips

1 flax egg (1Tbs ground flax seed mixed with 3Tbs. of water and let sit for a few minutes)

 

Directions:

Preheat your oven to 350 degrees Fahrenheit.

Mash all your bananas using a fork or hand mixer, then add the rest of your ingredients and mix well.

Line your cookie sheet with parchment paper.

Using a spoon, scoop your dough onto the parchment paper. These cookies will not flatten out, so if you like your cookies flat then place them that way.
 

Bake for 15-17 minutes or until cookie is firm and lightly browned. Cool for 5 minutes, and enjoy!

  1. Mmm! These are so good. I was about to buy a package of cookies today, instead I made these and I'm so glad I did. These are way better. And much healthier too of course. :)
